Paleo Chicken Chilaquiles

I apologize in advance if you're one of those people that really likes recipe blog posts with a picture of every step in the meal making process, cause I don't do that. It would take me forever to make dinner for my family if that were the case!

Anyway, John and I sure love Mexican inspired food. This dish is an adaptation of traditional Chilaquiles, just without any grains, corn, or dairy. That means no tortillas, cheese, or sour cream. But I promise if you just try it with an open mind, you won't miss these typical Mexican food "staples". Mexican food can still taste just as good, if not better, and give that same taste you're looking for without causing that nasty insulin spike.




Ingredients:

Zesty Slow Cooker Mexican Chicken:
Two chicken breasts
Salt & pepper
1/4 cup Salsa
1/4 cup water
2 chicken bouillon cubes

Chilaquile/enchilada sauce:
28 ounce can whole peeled tomatoes, drained
2 garlic cloves
1 shallot
1 jalapeño
1 tbsp butter
1 15 ounce can drained black beans (optional)

Toppings:
Eggs
Cilantro
Avocado

Directions:
Salt and pepper the chicken breasts and sear both sides over a medium high heat in a skillet. Transfer to a slow cooker. Add the salsa, water, and bouillon cubes. Cover and cook on high for four hours or on lie for eight hours.

In a blender combine the drained tomatoes, garlic, shallot, and jalapeño. Blend until smooth. Melt butter in a sauce pan over medium high heat. Add the tomato mixture and beans. Once sauce starts to bubble, turn down heat and keep at a low simmer for about 10 minutes.

Remove chicken from slow cooker and shred with two forks. Make a bed of shredded chicken on a plate, top with about 1 cup of sauce, 1-2 eggs anyway you like them (sunny side up is best), sliced or cubes avocado, and chopped cilantro.

"Carbs" Are Killing Us.

I think about blogging about this all the time. Over the last 6-8 months, nutrition has been an obsession of mine.

As you may recall, at the end of July I did The Master Cleanse, and then posted a brief message indicating that I had eliminated certain bad foods from my diet (like processed foods). What I didn't elaborate on was the elimination of certain carbohydrates, grains, and other sugary foods.

After my cleanse I permanently switched to a Paleo/Primal lifestyle. I encourage you to follow the links if you are not well versed on the topic.

When I first switched to this way of eating (John and Daphne did too), we shared our excitement a little too much. People openly, and understandably, disagreed with us. We raved about cutting grains, corn, potatoes, beans, dairy, and sugar from our diet with the hopes that others would automatically agree.

People do NOT agree. At least no one I spoke with. I even went as far as to write a review on a Primal diet book in my nutrition class last quarter. Of course my professor disagreed with me (she even went as far to talk about the absurdity of my paper in front of the whole class), as she lectured for 10 weeks of the importance of eating a diet rounded with grains, beans, and dairy.

From then on, I simply decided to keep my diet to myself, lead by example, and simply answer any questions if I was asked first. However, I have seen SEVERAL articles pop up more frequently in the past month or so. Every time I do, it just reaffirms the decision that I had made. It makes me so happy to know that I have made a good choice so early in my life. However, it makes me sad that more people don't know about it. I feel as though people in our society have been completely lead astray. We are brainwashed to think that eating the foods that are shoved in our faces are good for us when, in fact, they are killing us.

I found this visual aid today and feel really compelled to share it.

One discrepancy I have is the use of the word "carbs". I know what they mean, they mean things like refined grains, white grains (maybe even whole grains), corn, sugar, processed foods, cereals, pasta, rice... etc. I agree with that. The thing I don't agree with is that our body does in fact need carbohydrates to survive. Those carbohydrates are found in the form of fruits and vegetables though. I track my nutrition almost daily and find that somewhere around 30%-40% (a perfectly sound ratio) of my dietary intake is from carbohydrates from fruits and vegetables.

Shocking fact: between 25-30% of my diet is from fat. I'm not overweight, and have a perfectly healthy BMI.

So PLEASE don't confuse this new movement with the Atkins diet (which sort of had the right idea), which advocated excluding ALL carbs, even those in fruits and vegetables. Produce is SO good for us and should be the base of our diets. On top of fruits and vegetables, we should be eating unprocessed meats (fowl, fish, beef, pork), nuts (almonds, pecans, walnuts), seeds, fats (oils, animal fat, coconut milk and oil), and eggs.

I love the way I eat, and I NEVER feel deprived. In any given day, this is what my diet looks like:

Breakfasts will include: eggs, bacon, sausage, fruit (berries, oranges, apples, mango, banana), salsa, nuts

Lunches will include: dinner leftovers, fruit, tuna, nuts

Dinners vary WIDELY and include variations of the following: chicken, beef, fish, TONS of vegetables-especially leafy greens with a vinaigrette dressing, herbs, seasonings... etc. It pretty much consists of a portion of meat, and half a plate of vegetables though.

Anyway- I'm not trying to shove this down anyone's throat, but I'm not trying to keep it a secret either. I just wanted to officially stand behind this new movement that I am confident will gain MUCH more momentum than we're currently seeing.

Whoops!

I just looked back at my last post and realized that I haven't been doing very good with my resolutions... and it's only the 11th! That's ok. I still have time to correct myself this week.

I am however, going to print up a bullet point list of my resolutions and put them on the fridge to help me remember them daily! I definitely disobeyed goal #2 last night when John made 3 Ingredient Peanut Butter Cookies for dessert... I'll just be extremely strict the rest of the week.

Today I am going to accomplish goal #1 by attending the Pilates class at PSU's rec center. I do feel that that would be considered a yoga style exercise. Plus, I'm excited to try something new. AND- the only time they offer yoga classes is early in the morning or while I'm in class. Boo!

So this week has been very interesting- school wise. I'm taking a class from a professor I had last quarter. I really enjoyed his class and the content was very straight forward. All we did was take notes, lecture, and then the midterm and final exam. Plus he's a great lecturer... when he talks it's actually interesting. So I signed up for another one of his classes and the course work is completely different! Biggest disappointment: Group Projects. I HATE, nay, DESPISE group projects. My other class is going to be a LOT of work. On top of the fact that she gave us a 6 page syllabus, she told me that I should drop the class and take it again after I have more Community Health courses under my belt. Um- it's a little too late to just be switching classes around. So, I'm going to have to suck it up, work my ass off, and just do it.

Nothing gives me the motivation to complete a difficult task like someone telling me that I can't/shouldn't do it.

Resolution

I'm one of those people who tend to think "New Years resolutions are dumb! I am NOT going to announce outlandish resolutions to the world only to FAIL in front of EVERYONE." I start off thinking this... but I usually end up retracting this statement and write down a thoughtful list of realistic goals I wish to complete during the year.

After I was finally able to catch my breath after Christmas, and then again after John's family stayed with us for a visit for 6 days after Christmas, it was time to sit down and think about changes I wanted to make and goals I wanted to complete.

I dug through my blog to read my resolution post from last year. Here it is if you want to reference it. I was really proud of myself when I realized I accomplished nearly all of my goals

1) I'm happy to say that I got very creative in lots of different ways (with the help of spray paint). And the creativity won't stop here. We've still got LOTS more work to do on this huge house!
2) I have gotten straight A's since attending PSU. I'm so happy with myself!
3) I didn't necessarily participate in any fitness competitions, but I did join a women's soccer league. I absolutely love it. We play weekly games and I am absolutely addicted!
3b) I did achieve my fitness goal in 2011! I was able to lose about 15 pounds and have kept it off with the cleanse I blogged about and a change in my diet. I have never been more satisfied with my eating habits or about how I look and feel.
4) 2011's garden was pretty successful. But I learned a LOT. Some things went over very well, and some things not so well. I'm excited to see how I can use what I've learned to make a bigger and better 2012 garden. I did preserve food- just by freezing it, not canning it.
5) Unfortunately, I was not able to travel to Japan. I'm aiming for it still. Perhaps this year. Or maybe next year.

So, I feel pretty pumped to look at the goals I wrote down last year and to see that I pretty much accomplished them all. Without further ado, here are my goals for 2012!

1) Practice yoga at least once a week (however twice a week would be better!). I absolutely LOVE yoga. I feel SO great when I do it. I got really into the routine of doing it almost everyday during the summer, and then when fall picked up I lost the momentum. I want to start out by setting a goal of once a week. I truly believe that If I can do that, I will want to do it more often.

2) Limit sweets/treats/desserts to once a day at 100 calories at a time. I don't know what has gotten into me, but I am craving desserts and treats all the time! The funny thing is I really believe that I am very good at keeping up with my diet. However, I somehow talk myself into believing that it's ok to eat cookies and brownies all the time! It's out of control. So from now on, this is my rule.

3) Spend quality time with Daphne everyday. Preferably 30 minutes. Life can sure get in the way with what matters most. I admit that on a day to day basis I'm find myself telling Daphne that I'm too tired to play the game she made up. Even though I spend a fair amount of time listening to her stories, reading to her at bed time, talking to her in the car... it's the times I sit down and give her my FULL attention that matters most. When John, Daphne, and I sit down a play a board game or play hide and go seek, it really connects us as a family. And I want to try and do something like that everyday. Because these moments are fleeting people!

4) Go on a vacation with just John and myself. I can't remember the last time that John and I went on an overnight vacation with just him and me. But I'd sure like to make that a priority to do something like that at least once a year.

And like I said last year- don't let January be the only time of the year that you decide to set goals for yourself. Cause I don't.

Gettin all crafty up in here

I saw these on Pinterest (or as John says: Pin Interest), and decided I just had to make them as my little Christmas treat to give to friends.


And I'm sure we've all seen hundreds of ways to make your own sunburst mirror...

This was actually an idea I came up with on my own. I bought a set of 5 round mirrors (originally black), with the intention of making a sunburst mirror. I saw some shish kabob sticks in my drawer, grabbed my hot glue gun and went to work. I'm super stoked with the results.



And last night we made these with some friends...

Does anyone read this anymore? I have no idea.

Here's what we've been up to lately... ssdd. Pretty much nothing terribly eventful. I think the highlight as of late was our trip to California though. We flew down to California for 5 days to attend my little sister's wedding and my 10 year high school reunion. It was a TON. OF. FUN.

But here's the deal- I am very busy. On Tuesdays and Thursdays I go to school for 4 hours. On Monday, Wednesday, and Friday, I work at John's office. In between I try to juggle homework, cleaning, cooking, yard work, shopping, staying active, etc... I am finding less and less time to update the ol' blog. Updating Facebook is SO much easier, and I feel like I already put everything on Facebook anyway and by putting the same things on a blog is just over kill. So, for anyone interested in the day to day happenings of my life, can follow me on Facebook. If anything is interesting enough to warrant a post, I'll go ahead and put things up here. Probably very sparsely though. The most you might get out of me is recipes and updates following holidays. But for those who will be checking the blog over anything else, you may be able to catch my twitter updates (which I will probably do more frequently).
